There can’t be many mums who wouldn’t appreciate beautiful breakfast served in bed on Mother’s Day, which in America falls on 14 May in 2006. Here are some ideas for a healthy Mother’s Day breakfast that’s bound to please.

Serve fresh, delicious fruit Make a fresh fruit salad, or take a few perfect fruits and arrange them attractively. Try sliced kiwis scattered with blueberries, chopped diced fresh pineapple decorated with mint, a fan of mango slices, a bowl of mixed berries, a perfectly ripe passion fruit, to eat with a spoon.

Baked goodies If you want to serve a croissant as a special-occasion treat, don’t go to the supermarket and buy a flabby one that’s packaged in plastic. It’ll be full of unhealthy fats, and won’t even taste that good. Go to a baker or delicatessen and buy a light and crisp fresh croissant, made with butter. Warm for a few minutes in the oven to serve.

Something hot? What’s your mom’s favorite cooked breakfast? Would she like a bacon sandwich, grilled mushrooms on toast, or a perfect poached egg? If you decide to cook, serve her with fruit or cereal first, then when she’s finished prepare the hot food freshly and serve straight away on a warmed plate. Remember to provide a napkin.

Refreshing juices A blend of freshly squeezed or juiced fruit juices would make a lovely smoothie. If you have a juicer, try apple, carrot and ginger, or banana and mango with some yogurt stirred through to make an extra-creamy drink.

Hot drinksServe freshly made coffee or tea, or for a real treat, make a mug of hot chocolate topped with a spoonful of whipped organic cream and a dusting of cocoa powder.

Don’t overload the tray Too many bowls and mugs sliding around will make the tray hard for your mom to balance. A clean cloth, such as a linen napkin, spread on the tray gives more grip. Remember a posy of spring flowers, to make your Mother’s Day breakfast tray complete.
